Mai più senza – Torta di mele ferrarese di Gosetti della Salda

Non si è mai vista su questo un blog una serie di tre dolci consecutivi.

E, per di più, con l’estate alle porte, la prova costume ormai drammaticamente vicina e quest’afa appiccicosa che ti terrebbe volentieri alla larga dal forno.

Ma non so dire di no alla colazione, ormai lo sapete meglio di me, e non so rinunciare ad un inizio di giornata sano, con una fetta di torta fatta in casa, magari ricca di frutta. E, quando si hanno un po’ di mele da smaltire, questa torta è una mano santa.

L’operazione più lunga e difficile è sbucciare e tagliare le mele a fettine (e quanto possa essere difficile lo potete immaginare), mentre il resto della torta si prepara in un battibaleno, senza nemmeno aver bisogno di una bilancia da cucina.

Il merito è tutto di un grande classico dei libri di cucina, Le ricette regionali italiane di Anna Gosetti della Salda, scoperto grazie allo Starbooks e scritto in tempi in cui tanto della cucina si dava per scontato; niente ricette per dummies, tante misure ad occhio, poche indicazioni sulle dimensioni delle teglie o sulla cottura ottimale. La torta è semplicissima, e ha quella consistenza morbida che ricorda da una parte le frittelle di mele e dall’altra una torta con crema e frutta; una torta semplice, umida e succosa, un favoloso tuffo nel passato.

  • Resa: 1 torta di 24 cm di diametro
  • Preparazione: 15 minuti
  • Cottura: 40 minuti
  • Pronta In: 55 minuti

Ingredienti

  • 5 cucchiai colmi di farina 00
  • 3 cucchiai di zucchero la ricetta originale ne prevedeva uno solo, ma con tre cucchiai secondo me si ottiene una dolcezza perfetta (la torta è poco dolce)
  • 2 uova divise fra albumi e tuorli
  • 1/2 bustina di lievito per dolci
  • latte q.b (circa 150 grammi)
  • 1 chilo di mele pelate e tagliate in fettine sottili
  • burro si può omettere, se utilizzate la carta forno
  • 1 pizzico di sale
  • scorza di limone grattugiata, una mia aggiunta

Istruzioni

  1. Fate una pastella con la farina, i tuorli, lo zucchero, un pizzico di sale, il lievito in polvere e latte quanto basta, circa 150 g. La pastella non deve essere troppo densa, ma nemmeno troppo liquida.
  2. All'impasto aggiungete le mele, pelate e tagliate a fettine sottili.
  3. Montate gli albumi a neve ferma ed uniteli all'impasto, mescolando dal basso verso l'alto, quindi aggiungete la scorza di limone grattugiata.
  4. Versate il composto in uno stampo precedentemente imburrato ed infarinato (oppure coperto di carta forno). Io ho utilizzato una tortiera di 24 cm di diametro, ma se desiderate una torta più alta potete utilizzare una tortiera di diametro più piccolo.
  5. Pre-riscaldate il forno a 180°C ed infornate in forno già caldo per 40-45 minuti. Fate la prova stecchino, ma considerate che la prova deve rimanere piuttosto umida, quindi evitate di cuocere troppo la torta.
  6. Sfornate, quindi fate raffreddare completamente la torta nella teglia, prima di sformarla.
