Ricordi di Calabria ed una pasta semplice ed estiva

L’avevo detto, io, che ho i miei tempi, ma che prima o poi sarei arrivata a raccontarvi del periodo trascorso nella Locride, e quel momento è arrivato.

Non l’ho mai chiamata vacanza, perché a conti fatti non posso dire che lo sia stata, visto che ero laggiù per seguire il mio compagno, impegnato con la sua ricerca nel parco archeologico di Locri Epizefiri. E, con lui fuori impegnato a lavorare tutto il giorno (o quasi), capirete bene perché non possa averla chiamarla vacanza. Ma si è fatto quel che si è potuto per godere appieno di questo periodo nel sud d’Italia, e questi sono i miei ricordi, insieme ai i miei consigli per chi si trovasse a passare per quelle zone.

  • In primissimo luogo, quindi, non posso che consigliarvi di andare a visitare il parco archeologico di Locri Epizefiri, con annesso museo; non metto foto, per non risultare di parte, ma sappiate che è davvero un bel sito archeologico, che si trova in un vasto parco che costeggia ed ha al suo interno numerosi alberi da frutto. Io ho avuto il privilegio di avere gli scavatori stessi come guide, una fortuna che non capita spesso e che mi ha permesso di apprezzare il sito da un punto di vista speciale, ma se passate da quelle parti non lasciatevi sfuggire questo sito archeologico.
  • Se siete da quelle parti, poi, non potete perdervi una visita a Gerace, un borgo medievale incantevole, di grande rilievo storico e dai bei colori della sabbia.
    Vi segnalo anche che a fine luglio si tiene fra i suoi vicoli “Il borgo incantato“, festival Internazionale di Arte da Strada, durante il quale troverete per strada tante cose buone da mangiare, come le zeppole, la pasta di casa con lo stocco e tanto tanto altro.
    Se invece non siete così fortunati da azzeccare il periodo giusto, potrete comunque consolarvi con un bel piatto di antipasti calabresi (spesso appartenenti a due categorie, sottoli oppure fritti) o di pasta alla geracese (con pomodoro fresco, peperoncino, acciughe, olive e pomodoro secco).
    Io ho mangiato proprio un bel piattone di antipasti misti appena fritti (frittelle di funghi, fiori di zucca, patate, riso ecc.) e un piatto di pasta alla geracese da  “Il brillo parlante“, Via Zaleuco 19/21 che mi sento di consigliare: un locale senza pretese, in cui poter mangiare una buona e semplice cucina di casa, spendendo il giusto (che non guasta mai).

  • Altro sito archeologico della zona è la Villa Palazzi di Casignana, in cui fra i resti della villa troverete l’impianto termale che conserva ancora buona parte degli impianti in tubi fittili e della pavimentazione laterizia e musiva.

  • Non sto dimenticando il mare, tranquilli! Vi consiglio un bel bagno sulle stupende spiagge di Capo Bruzzano, promontorio della costa ionica, in cui avrete occasione di trovare, in aggiunta alle classiche spiagge di piccoli ciottoli regolari, degli scogli modellati da vento ed acqua e delle piscine di acqua cristallina (che purtroppo si riducono di anno in anno) da mozzare il fiato.

  • Fra i miei ricordi più vividi c’è la selvaggia e rigogliosa natura calabrese, che di punto in bianco vi sorprende con un ulivo, un fico d’India o un banano (sì, ho proprio detto banano).

  • Non perdete anche l’occasione di trascorrere una bella serata in spiaggia. Io ricordo almeno un paio di notti limpide e stellate (anche se le stelle qui non si vedono), una delle quali davanti ad un bel falò.

  • Un consiglio spassionato è quello di puntare almeno una volta la sveglia presto (e per presto intendo le 6, che per me è stata la sveglia quotidiana in Calabria, ma questa è un’altra storia) e di andare a godervi la meraviglia di una spiaggia deserta alle 7 del mattino, anche quando il tempo è nuvoloso.

  • Beh, ovviamente l’ultimo consiglio è di rilassarvi (e questo vale per qualsiasi vacanza, eh).. forse non riuscirete a farlo tanto quanto lei, ma provateci, almeno!

Ed ora vi lascio con una pasta molto estiva e molto semplice, ma per quanto mi riguarda anche estremamente soddisfacente, con pomodorini freschi, peperoncino, basilico e tanta, tanta ricotta salata.

Ingredienti

Istruzioni

  1. Mettete a bollire in una pentola abbondante acqua salata. Quando l'acqua bolle, calate la pasta, avendo cura di controllarne la cottura, che dovrà essere al dente.
  2. In una padella fate scaldare dell'olio extra-vergine, quindi fate dorare uno spicchio d'aglio.
  3. Aggiungete quindi i pomodorini tagliati a metà, aggiustate di sale e aggiungete il peperoncino a piacere e qualche foglia di basilico.
  4. Quando la pasta sarà al dente, scolatela e fatela saltare insieme al condimento per qualche minuto.
  5. Impiattate e cospargete la pasta con un'abbondante grattugiata di ricotta salata (che io invece ho messo a scaglie piuttosto grossolane)
