Pesche al cioccolato 2.0 per l’#italianelpiatto

Eccoci ad un nuovo appuntamento con L’Italia nel piatto, a tema insalate e piatti freddi.

Niente di più gradito, visto che il caldo di questi giorni mi ha portato nel tunnel della cucina senza cucina e, dopo i tartufi di ricotta per l’aperitivo, oggi vi propongo una macedonia molto piemontese, perfetta per il fine-pasto, ma anche per una merenda golosa.

L’ingrediente principale di questa “ricetta” sono le pesche di Canale, produzione tipica di questa zona del Roero: pesche a pasta gialla, con la buccia pelosa e dolcissime, quest’anno in particolar modo (il caldo a qualcosa servirà pure?). Ho deciso di partire da un ingrediente assai tipico del Piemonte, vista la diffusione della sua coltivazione nella zona del cuneese (sia nel saluzzese che nella zona del Roero), e di creare una semplicissima macedonia, in cui però i gusti piemontesi si distinguessero chiaramente.

Ho voluto ricreare, quindi, un abbinamento molto caro alla tradizione locale, quello che potete gustare nelle nostre pesche ripiene: alle pesche, quindi, si accompagnano gli amaretti, il liquore all’amaretto e del cioccolato, in questo caso la granella di fave di cacao ricoperta di cioccolato fondente Domori, che ben bilancia la dolcezza d’insieme.

Ingredienti

Istruzioni

  1. Lavate e sbucciate le pesche, quindi privatele del nocciolo e tagliatele a tocchetti, che metterete in una terrina.
  2. Aggiungete lo zucchero di canna, il liquore all'amaretto e mescolate.
  3. Distribuite in due coppette, quindi guarnite con gli amaretti sbriciolati e la granella di fave di cacao.
  4. Servite subito (in modo che gli amaretti rimangano croccanti).
