Profumi di fine estate – Timballo di verdure grigliate alla menta di Pancalieri per l’#Italianelpiatto

Eccoci arrivati ad un nuovo appuntamento con l’Italia nel piatto, e questa volta il fil rouge che legherà le nostre ricette sono le erbe aromatiche e i profumi di fine estate.

Quindi, pensando e ripensando, non sono riuscita a trovare nulla di più calzante rispetto a questo zuccotto di verdure grigliate al profumo di menta di Pancalieri, che in un sol colpo ci permette di dire “arrivederci” (addio no, per carità) a tutte quelle meravigliose verdure che popolano l’estate, pomodori, zucchine, melanzane e peperoni, e allo stesso tempo ad una delle erbe aromatiche che più associano il loro profumo alla medesima stagione, la menta.

In questo caso ho scelto di usare una menta piemontese, e non solo perché siamo universalmente noti per il modo in cui in Piemonte si pronuncia menta (non avete mai sentito un piemontese pronunciare la parola menta – con quella bella e aperta?! Non sapete cosa vi siete persi!), ma anche perché la menta, soprattutto piperita, che si produce nel pancalierese (zona in cui si produce circa il 50% delle erbe officinali italiane) è un’erba aromatica davvero eccezionale, profumatissima ed intensa, che permette di ottenere un olio essenziale considerato il migliore al mondo per finezza del profumo e gradevolezza del gusto.

Ma dovreste solo sentire il profumo incredibile che sprigiona in questo piccolo timballo, per decidervi a cercare non dico la menta di Pancalieri, ma almeno il suo sciroppo per accaparrarvi ancora un po’ d’estate!

Timballo di verdure grigliate alla menta di Pancalieri

  • Pronta In: 2 ore 40 minuti

Ingredienti

Istruzioni

  1. Lavate le verdure, quindi tagliate zucchine, melanzana e pomodori a fette non troppo sottili.
  2. Fate scaldare una pentola di ghisa (o affine) sul fuoco e ponetevi il peperone ad abbrustolire. Quando sarà ben bruciato all'esterno, toglietelo dal fuoco e mettetelo a raffreddare in una busta di carta per alimenti.
  3. Nel frattempo, grigliate le fette di melanzana, zucchine e pomodoro, quindi lasciate raffreddare.
  4. A questo punto, private il peperone arrostito della buccia e tagliatelo in filetti non troppo piccoli.
  5. In una terrina, mescolate pan grattato, olio, foglie di menta fresca spezzettate con le mani, il Parmigiano grattugiato e, se necessario, aggiustate di sale.
  6. Una volta che avrete tutto pronto, procedete a comporre i timballi. Oliate leggermente due stampini non troppo piccoli (delle cocotte, degli stampi da budino o simili), quindi fate uno strato di melanzane grigliate, poi mettete un po' di composto di pan grattato alla menta, quindi procedete con uno strato di peperone grigliato, un po' di composto, le zucchine grigliate, del composto, il pomodoro grigliato e chiudete con uno strato più abbondante di composto, premendo bene.
  7. Quindi infornate per circa 5 minuti a 180° C (potete lasciare anche qualche minuto in più, ma badate che il composto non colorisca troppo). Sfornate, lasciate raffreddare e poi mettete in frigorifero.
  8. Al momento di servire, capovolgete il timballo sul piatto da portata, eventualmente su un letto di insalatina e guarnite con foglioline di menta fresca o qualche goccia di aceto balsamico.
