Una torta di mele rustica 100% made in Piemonte con Tastè

Non è certo una novità il mio amore per i prodotti piemontesi, nè la mia passione per la colazione e tutto ciò che si possa mangiare in quello che per me rimane il pasto più meraviglioso della giornata (sebbene spesso si riduca a 10 minuti di furore mattutino).

Per questo quando ho ricevuto il mio box di prodotti Tasté, un nuovo servizio che permette di far arrivare comodamente nella casa di città tutto il ben di Dio della campagna piemontese, non ho avuto dubbi: ci sarebbe stata una torta di mele nel mio futuro.

Una di quelle torte come piacciono a me: rustiche, con lo zucchero di canna e la farina integrale (questa volta di orzo, che lascia un piacevolissimo aroma tostato alla torta), con la giusta quantità di burro e una bella (leggasi abbondante) dosa di mele.. la dose esatta per far sì che i capelli, quando spegni il forno, prendano un inequivocabile profumo di torta di mele (una delle mie fisse, chissà se ce l’ho solo io?).

Così mi sono ispirata a questa ricetta della mia amata Marina e, cambiando qui e là (che non ce la fo proprio a tenere una ricetta uguale), è venuta fuori questa torta rustica e piemontese, che ha illuminato le mie colazioni per qualche giorno. Morbida ma consistente, umida ma non troppo, con quei granellini di orzo e di zucchero di canna che ogni tanto si avvertono sotto i denti, e con la presenza confortante della mela, presente ad ogni morso.

Una torta capace di cambiare il verso ad una giornata, ecco cos’è.

Torta di mele rustica

Ingredienti (per una torta di 20 cm di diametro):

Procedimento:

  1. Separate i tuorli dagli albumi, quindi montate questi ultimi a neve ben ferma. Metteteli in frigo, mentre procedete con il resto della preparazione.
  2. Montate a lungo i tuorli con lo zucchero, finché spumosi.
  3. Aggiungete quindi il burro fuso a filo, continuando a montare, finché avrete un bel composto gonfio.
  4. Nel frattempo, setacciate le due farine insieme al lievito per dolci.
  5. Unite le farine al composto di uova, zucchero e burro (io ho usato il gancio a K dell’impastatrice, ma potete farlo tranquillamente con un cucchiaio di legno).
  6. Unite quindi un paio di cucchiai di albumi montati a neve e mescolate velocemente per ammorbidire il composto, quindi unite il resto degli albumi, a poco a poco e delicatamente.
  7. Pre-riscaldate il forno a 180°C.
  8. Sbucciate due mele e tagliatele a fettine sottili.
  9. Versate l’impasto in una teglia di 20cm di diametro precedentemente imburrata e infarinata, livellatelo, quindi disponete le fettine di mele di taglio sulla superficie, facendole affondare in parte nell’impasto.
  10. Spargete un cucchiaio di zucchero di canna sulla superficie e ultimate con qualche fiocchetto di burro
  11. Cuocete in forno già caldo per 35-40 minuti, quindi sfornate, lasciate raffreddare completamente, quindi sformate la torta.
