Fascino in nero: risotto al nero di seppia

Ultimamente mi sono concessa troppa allegria, troppi colori, troppa primavera! Quindi oggi dico basta, e mi depuro con un post total-black, in cui il nero, proprio lui, la fa da padrone.

E questo per quanto riguarda la vista, ma per il gusto?!

Il gusto rimane primaverile, fresco e deciso, che fa pregustare l’estate con le sue note di mare, ma che rimane ancora in questa terra di mezzo che è la primavera, visto l’utilizzo del risotto (che io non vedo affatto come piatto estivo, se si esclude la sempreverde insalata di riso).

Sull’olfatto non mi dilungo, visto che di pesce si tratta, e il pesce o lo si ama o lo si odia, odore incluso… certo non acquisterei un’eau de toilette alla seppia, ma per cucinare e, quindi, mangiare pesce (e non mi veniate a dire che la seppia non è un pesce, ma un mollusco cefalopode, che il concetto l’avete capito benissimo) sono pronta a sopportare anche il non profumatissimo odore (sebbene, in realtà, le seppie non abbiano poi questo gran olezzo).

Sul tatto che dire?! Se proprio ci tenete a saperlo, le seppie sono abbastanza scivolose e durette, non possiedono quindi una consistenza particolarmente piacevole, ma tant’è, come per l’odore, c’è di peggio! Sul nero di seppia, invece, posso solo dirvi che, in presenza di strani desideri legati a tinte atipiche per capelli, potrebbe andare bene!

Direi che ci manca solo l’udito… ma siccome nella mia –pur breve– vita non ho mai sentito una seppia parlare nè, ancor meno, cantare, dovrete attendere che sviluppi dei poteri sovrannaturali appositi.

Finita questa filippica immotivatamente lunga sui cinque sensi, vi lascio in pace e vi presento questa semplice ricetta per un buon risotto al nero di seppia e seppie.

Risotto al nero di seppia (e seppie)

  1. Lavate e tagliate in piccoli pezzi le seppie e tritate finemente la cipolla. Mettete in una padella capiente un filo d'olio a scaldare, aggiungendo poi lo spicchio d'aglio e la cipolla tritata; quando le cipolle saranno imbiondite, aggiungete le seppie tagliate a pezzetti e fatele rosolare.
  2. Dopo qualche minuto sfumate con un bicchiere di vino bianco e fate cuocere ancora. Nel mentre, lavate i pomodorini e tagliateli a metà, aggiungendoli alle seppie; insaporite a piacere con un po' di peperoncino.
  3. Quando i pomodorini saranno un pochino appassiti, aggiungete il nero di seppia (da bustina o dalle sacche), lasciando amalgamare il tutto per un paio di minuti (in tutto ne dovrebbero essere trascorsi circa 20, tempo che permetterà alle seppie di raggiungere già una cottura media). A questo punto assaggiate il sugo, per vedere se necessita l'aggiunta di sale: io non ne ho messo neanche un pizzico, e il risultato è stato comunque piuttosto gustoso (grazie al sale contenuto nel brodo).
  4. Ora aggiungete il riso, che farete cuocere aggiungendo un mestolo di brodo di pesce (o vegetale) per volta. Trascorsi circa 20 minuti (sempre a seconda di come vi piaccia il riso), quando il brodo sarà evaporato e il risotto avrà ottenuto una bella consistenza cremosa, togliete dal fuoco e impiattate.
