No, non sono impazzita saltando quasi un mese dell’amato/odiato calendario… so che mancano ancora tre settimane almeno all’avvento dell’estate! Ma, visto che da giorni ormai le temperature a Torino (nella fredda ed uggiosa Torino) sono fisse sui 30°C, mi sa che almeno di fatto l’estate è qui con noi..
E cosa c’è di meglio per rinfrescarsi dall’arsura rispetto ad un buon sorbetto fatto solamente con frutta fresca, zucchero e acqua?!
Fino ad oggi non mi ero mai confrontata con questa preparazione, non possedendo una gelatiera, ma poi, complice una puntata particolarmente esplicativa de La prova del cuoco (che però riguardava il sorbetto fatto con la gelatiera) e un post dedicato a questo fantastico spezza-caldo, mi sono detta: è ora che ci provi!
Così ho preso gli ingredienti consigliati da La prova del cuoco, il procedimento di Le ricette di Nicola e ho creato il mio personale mostro (per modo di dire, visto che il risultato mi ha assolutamente soddisfatta): un fresco e salutare sorbetto, che io ho scelto di aromatizzare al pompelmo rosa (così, se non fosse riuscito alla perfezione, avrei potuto dare la colpa a questo cambio di ingrediente.. diabolica).
Giusto per fare un riassunto sugli ingredienti (in base a quanto detto a La prova del cuoco), per fare un chilo di sorbetto alla frutta bisogna tenere a mente delle percentuali (che valgono per la frutta contenente l’8% di zuccheri: nella puntata di faceva l’esempio delle fragole): bisogna sempre usare il 50% di frutta (500 g), il 28% di zucchero (cui va tolto l’8% di prima, quindi in tutto 240 g) e l’acqua va per differenza, quindi 260 g (in tutto 1 kg di ingredienti); inoltre, come addensante, si usava un cucchiaino di farina di carrube.
Ovviamente queste percentuali non valgono per gli agrumi, che contengono meno zucchero e di cui non si usa la polpa, ma il succo.
Quindi, dopo questa “introduzione alla matematica da sorbetto”, seguitemi per la ricetta del MIO sorbetto!
Sorbetto al pompelmo rosa senza gelatiera
Di Pubblicata:
- Resa: 1 chilo di sorbetto
- Preparazione: 10 minuti
- Cottura: 5 minuti
- Pronta In: 10 ore 15 minuti
Ingredienti
- 540 grammi di acqua divisi in due dosi da 270 grammi
- 220 grammi di zucchero ma potete ridurre anche a 200 grammi
- 240 grammi di succo di pompelmo rosa spremuto fresco (ma è ottimo anche il succo di limone)
- scorza di pompelmo di un pompelmo
- 1 cucchiaino di farina di riso o di carrube, opzionale
Istruzioni
- Mettete in un pentolino 270 g di acqua e lo zucchero, a cui avrete precedentemente mescolato il cucchiaino di farina di riso o di carruba (se avete scelto di metterlo; io quando non ce l'ho a disposizione non la metto, e il sorbetto viene comunque perfetto). Mettete sul fuoco, finché lo zucchero non sarà completamente sciolto. Togliete dal fuoco e aggiungete i rimanenti 270 g di acqua, così da far scendere la temperatura in fretta. Aggiungete ora i 240 g di succo di pompelmo (o di limone), filtrati attraverso un colino, e la scorza del pompelmo (o del limone).
- Mettete ora il composto ottenuto in una vaschetta da gelato (o contenitore simile) e lasciate che raggiunga la temperatura ambiente. Una volta raffreddato, mettete in freezer e dimenticatevi del sorbetto per qualche ora.
- Quando avrà iniziato ad addensare, estraete la vaschetta dal freezer e date una prima frullata con un mixer a immersione (o, se non lo avete, girate vigorosamente con una forchetta per spaccare i cristalli di ghiaccio in formazione), e rimettete nel freezer. Dopo qualche ora, tirate nuovamente fuori la vaschetta e ri-frullate (così il sorbetto incorporerà aria e rimarrà più soffice). In tutto il mio sorbetto è stato in freezer circa 10 ore.
- Tiratelo fuori dal freezer circa 5 minuti prima di consumarlo, e date una vigorosa rimestata con un cucchiaio... non sarà per consistenza uguale a quello comprato (comunque a mio avviso è fantastica anche la consistenza), ma il gusto è immensamente superiore!
- Ovviamente, se avanza, rimettete in freezer e tiratelo poi fuori circa 10 minuti prima di mangiarlo, rimestando sempre con un cucchiaio, in modo da rompere per bene i cristalli di ghiaccio e renderlo più morbido.
- Un'altra nota: se avete scelto di fare il sorbetto al limone, sarà perfetto se accompagnato da un goccio di gin o di vodka.
Naturalmente il tutto va gustato bello fresco, in modo da trovare un po’ di frescura da questa precoce estate!
