Risotto birra e speck… alla faccia dell’estate!

Se vi aspettavate, per festeggiare l’inizio dell’estate, che so, un gelato, una cheesecake senza cottura, un’insalata di riso, avete sbagliato di grosso, signori miei!

Siccome oggi Torino mi accoglie con 21°C e un grigino da settembre inoltrato, glielo faccio vedere io come mi adatto nel giro di un nanosecondo! E così, imbracciata una bottiglia di Super-birra, mi appresto a darvi una ricetta poco estiva, ma dal grande appeal.

Infatti, reduce dall’esperienza di C’è fermento (appuntamento saluzzese dedicato alle birre artigianali), in cui in una sola serata sono riuscita ad assaggiare un numero imprecisato di birre (che si aggira intorno alle 16 birre diverse, grazie alla collaborazione con gli altri amici degustatori), a mangiare un piatto di formaggi che mi darà il calcio necessario per i prossimi 10 mesi (grazie alle Fattorie Fiandino, presentissi alla manifestazione con formaggi e burro -il famosissimo burro 1889, salato e non) e a godermi della buonissima musica (grazie alla Treves Blues Band)… ma torniamo alle birre.

Dei 15 birrifici presenti (molti dei quali piemontesi, ma c’erano anche rappresentanze di altre regioni d’Italia), due erano “volti notissimi” (Baladin e SorA’LaMA’), un paio li conoscevo di fama (Beba e Pausa Café) altri sono facilmente raggiungibili da qui (sappilo, Birrificio La Piazza), ma ci sono state tantissime ottime sorprese: birre originali, buone e dal sapore vero… insomma, una serata dall’alto tasso alcolico (tanto non si guidava… tiè -un plauso va al Bob della serata) e dal grande gusto!

Dopo questo inno ai birrifici artigianali (ma anche alla birra fatta in casa, eh?! Io non sono razzista), che io amo davvero in modo incredibile, giungiamo alla birra in questione, quella che ho utilizzato per rendere questa ricetta più buona di quanto non fosse già sulla carta. Infatti, invece di utilizzare della birra qualunque (giammai!!), per questo risotto ho utilizzato la birra del mio cuore, ovvero una Super (qui trovate una piccola descrizione) del birrificio Baladin (se non ci siete mai stati, fateci un salto! Io faccio almeno un pellegrinaggio all’anno, e qui sotto potete vedere qualche foto fatta in occasione dell’ultima visita, subito dopo la mia laurea).

Chi di voi conosce questa birra magari si chiederà “ma la sprechi per un risotto?!“… Ma, credetemi, non è sprecata! Una piccola bottiglia di questa birra (25 cl) darà al risotto un retrogusto e una pienezza di sapore da 10 e lode. E naturalmente la bottiglia grande (da 75 cl) la potete benissimo usare per accompagnare il risotto (così sarete felici due volte). Per chi non avesse a disposizione questa birra (venduta anche on-line e da Eataly… ma ormai in Piemonte si trova anche in diversi locali), potete benissimo utilizzare un’altra buona birra ambrata dal sapore deciso… magari non sarà proprio la stessa cosa, ma sarà ugualmente buono!

Risotto alla birra Super e speck

Ingredienti

Istruzioni

  1. Mettete una noce di burro a scaldare in padella e fatevi rosolare la cipolla tritata finché sarà appassita. A questo punto, aggiungete lo speck e fatelo rosolare per un paio di minuti.
  2. Ora aggiungete il riso e fatelo tostare per qualche minuto, sfumando poi con la birra.
  3. Continuate quindi la cottura del risotto con il brodo vegetale, finchè il riso non sarà arrivato a cottura (ci vorranno circa 18-20 minuti).
  4. Spegnete il fuoco e mantecate il risotto con parte del gorgonzola, lasciando gli ultimi cubetti per guarnire i piatti, così che ogni piatto risulti poi cremoso al punto giusto!
