Se passate per Recco, o per altre città vicine della Riviera di Levante ligure, non potete non assaggiare la famosissima focaccia di Recco. Ciò a patto che amiate alla follia lo stracchino, visto che dentro ad una focaccia di Recco c’è più o meno la quantità di stracchino che potreste mangiare in un anno o due della vostra vita.
Uno dei grossi inconvenienti della focaccia di Recco è che è pressoché impossibile da trovare al di fuori della sua zona d’origine. Quindi, per ovviare all’astinenza da focaccia stracchinosa, perchè non provare a farne una versione casalinga?! E, ancor prima che mi impegnassi nella spasmodica ricerca di una ricetta efficace, quest’ultima mi è letteralmente caduta addosso, e io non ignoro mai un chiaro segno del destino, soprattutto in fatto di cibo!
Così, mentre navigavo fra i miei soliti food blog amici per informarmi sulle novità, mi sono imbattuta nell’efficacissima ricetta di Manuela di Manu’s Menu per preparare l’amatissima focaccia di Recco.
La ricetta è molto semplice da preparare, non richiede lunghi tempi di attesa (la pasta non è lievitata), ma solo grandissime quantità di stracchino (la ricetta originale su cui Manuela si è basata prevedeva l’utilizzo di 1 kg di stracchino per 500 g di farina; sia lei che io abbiamo dimezzato -o quasi- le dosi… sappiatelo). Siete pronti?
Focaccia al formaggio (simil-Recco)
Di Pubblicata:
- Resa: 1 focaccia da 30 cm
- Preparazione: 10 minuti
- Cottura: 15 minuti
- Pronta In: 1 ora 25 minuti
Ingredienti
- 125 g farina
- 12 ml olio extra-vergine di oliva più altro per spennellare la superficie
- 62 ml acqua tiepida
- 125 g stracchino io ho sostituito con crescenza, perché lo stracchino era terminato
- sale q.b.
Istruzioni
- Mettete la farina, l’olio extra-vergine e l’acqua in una ciotola ed impastate fino ad ottenere un impasto liscio, che lascerete riposare un’ora.
- Trascorso questo tempo, pre-riscaldate il forno al massimo (la ricetta prevede il forno a 250°C) e dividete l’impasto in due parti uguali. Stendete ora entrambe le parti in dischi molto sottili (quasi trasparenti): quando avrete i vostri dischi, foderate con uno di essi una teglia di 30 cm di diametro (precedentemente oliata o coperta di carta da forno).
- Distribuite uniformemente su questo strato lo stracchino, tagliato grossolanamente in pezzi. Coprite poi con il secondo disco di pasta, lasciando che copra lo stracchino morbidamente: pigiate con le mani solamente sui bordi, in modo da sigillare i due strati di pasta fra di loro. Infine, fate dei tagli sulla superficie (pizzicando con le dita o tagliando con le forbici) e poi spennellatela con abbondante olio extra-vergine e cospargete con del sale.
- Infornate in forno già caldo per circa 12-15 minuti, o finché la superficie non sarà bella dorata (volendo anche un po’ sbruciacchiata). Sfornate e mangiate mentre è ancora calda, cioè mentre il formaggio sarà ancora morbido
- Una nota: utilizzando la crescenza, la focaccia rimarrà un po’ più compatta (poiché questo formaggio perde meno acqua rispetto allo stracchino), ma sarà comunque ottima (lo strato di pasta inferiore rimane così meno acquoso: uno degli inconvenienti della vera focaccia di Recco è proprio la mollezza dello strato inferiore di pasta, che viene ammorbidito –forse persino troppo– dall’acqua rilasciata dallo stracchino)… la prossima volta spero di trovare lo stracchino, però, per provare ad essere del tutto fedele alla tradizione!
