L’estate sta finendo – caponata di melanzane

Come diceva la canzone, l’estate sta finendo (quasi mi spaventa il numero di canzoni trash che riesco a riesumare -e con quale facilità!), ma sono dell’idea che valga la pena di godersela finché ce ne rimane almeno un pezzettino: oggi secondo i calendari è l’ultimo giorno d’estate, l’aria si è già fatta più fresca, ma ho ancora voglia di camminate all’aria aperta, di giri in bicicletta, di pic-nic (mamma mia, quanto mi piacciono i pic-nic) e di piatti freschi e colorati (ma, non temete, nel frigo c’è già la zucca per il passato, e non è mica il primo della stagione).

Oggi è l’ultimo giorno d’estate e voglio festeggiarlo con un piatto che da qualche anno segna costantemente (e piacevolmente) le mie estati: la caponata di melanzane. La ricetta è di mio nonno (i legami di sangue non sono mai stati molto importanti per me, quindi questo nonno che non è mio nonno è più nonno del mio vero nonno.. sembra uno scioglilingua, ma io mi sono capita -poi elaborerò un test per capire chi abbia compreso questo strambo giro di parole) ed è ormai per me LA ricetta per eccellenza della caponata, l’unica che io abbia assaggiato finora che mi facesse venir voglia di rubare la terrina e di nasconderla sotto le coperte, per poterla gustare fino ad inverno inoltrato.

Caponata di melanzane

  • Preparazione: 30 minuti
  • Cottura: 35 minuti
  • Pronta In: 1 ora 5 minuti

Ingredienti

Istruzioni

  1. Fate spurgare le melanzane tagliate a tocchetti con il sale; sciacquatele bene, asciugatele e friggetele in olio extra-vergine d’oliva. Tenete da parte.
  2. Brasate la cipolla in olio extra-vergine e unite i pomodori tagliati a tocchetti, il concentrato di pomodoro e il pepe.
  3. Fate cuocere 10 minuti, quindi aggiungete i gambi di sedano tagliati a pezzetti, le olive, i pinoli, i capperi e lo zucchero sciolto nell’aceto.
  4. Cuocete per 20 minuti, poi aggiungete le melanzane precedentemente fritte nell’olio e aggiustate di sale.
  5. Fate cuocere ancora 5 minuti, per fare amalgamare i sapori
  6. Fate raffreddare; servite fredda, guarnendo con ciuffi di basilico.

  1. Eeeeeccola la caponata! Mamma mia che voglia che ho… purtroppo al momento sto seguendo una dieta abbastanza ferrea (che mi sta anche mandando un tantino giù di testa se vogliam esser sinceri) quindi per due settimane caponata off limits…ma tu dici che posso farla e poi congelarla? Magari non mettendo i pinoli ma mettendoli allo scongelamento…

    1. Spero che la dieta non sia per motivi di salute, mia cara..
      Per quanto riguarda il congelamento, sai che non saprei, non tanto per i pinoli (che comunque andrebbero anche loro messi in cottura), ma perché ho paura che, essendo una pietanza da consumare fredda e non da scaldare, possa perdere troppa acqua. Sono dubbiosa e non vorrei che l’esperimento portasse poi all’uccisione della caponata (non sia mai!!!).

    1. Ma sai che alla fine sono riuscita a scongiurare la trasferta con pc fisso a seguito, visto che l’utilizzo del suddetto pc sarebbe stato di UN SOLO GIORNO?! Incredibile, ma il mio tentativo di ragionare sull’effettiva utilitità della cosa HA FUNZIONATO (si grida al miracolo)!
      Ogni tanto si riesce ad ottenere qualcosa 😉
