Verso Natale – Confettura di zucca al cardamomo

Vi siete ormai rassegnati ai miei post da maniaca della zucca?! Fate bene, perché non credo proprio che questo sarà l’ultimo della stagione.

Di sicuro, però, è il primo post del genere “che ti regalo a Natale?!” (sì, facciamocene una ragione, Natale è alle porte, davvero). Ormai da qualche anno i miei regali di Natale sono per buona parte home-made e di ambito culinario (ma non solo.. ve l’ho mai detto che mi diletto a creare bigiotteria?! Ecco, ora è svelato anche questo mistero di Fatima -il milionesimo, per altro). Panettoni, tartufi, cioccolatini, cotognata, cognà, omini di pan di zenzero (e poi non dite che non vi do delle idee, ?!), ma soprattutto confetture, le vere salvatrici del Natale.

Si preparano in anticipo, se impacchettate nel modo giusto sono assai coreografiche (da sole o in cesti più articolati) e sono versatilissime. Si va dalle più semplici a quelle più particolari, da quelle “da crostata” fino a quelle “da formaggio e bolliti”.

Il bello della confettura che vi propongo oggi, la cui ispirazione mi viene dalla Ciliegina, è che può davvero mettere d’accordo tutti, i palati più coraggiosi che apprezzano un velo di questa confettura sulla fetta biscottata del mattino (per non parlare degli arditi, in grado di farne una crostata), ma anche quelli più pavidi che la abbinano ad un formaggio (pavidi, ma trendy, visto che ormai sposare formaggio e confettura -o miele- è molto à la page) -e, in questo caso, consiglio l’abbinamento con la Robiola di Roccaverano.

Insomma, regalo per coraggiosi, arditi o pavidi, ma sicuramente un regalo gradito.

 

Confettura di zucca al cardamomo

  • Resa: 7 vasetti (fra piccoli e medi)
  • Preparazione: 15 minuti
  • Cottura: 2 ore 0 minuto
  • Pronta In: 2 ore 15 minuti

Ingredienti

  • 1,5 kg zucca peso già mondato
  • 500 g zucchero
  • 5-6 semi di cardamomo la quantità dipende dal vostro gusto; con 5-6 semi il gusto di cardamomo è già considerevole
  • scorza di limone opzionale, se gradita
  • pectina opzionale, a seconda delle vostre abitudini e preferenze

Istruzioni

  1. Mondate la zucca e tagliatela a pezzetti.
  2. Mettetela in una pentola capiente insieme allo zucchero, alla pectina (se la utilizzate), alla scorza di limone (se gradita, in grossi pezzi) e ai semi di cardamomo (precedentemente sbucciati; decidete poi voi se ridurre i semi in polvere con un mortaio o lasciarli interi) e mettete sul fuoco.
  3. Portate a bollore e lasciate bollire a fuoco vivo per qualche minuto se utilizzate la pectina, altrimenti lasciate cuocere a fuoco dolce per circa 1 ora e mezza o 2 ore.
  4. Se volete una confettura in pezzetti, verificate la consistenza su un piattino e, se coerente con quella desiderata, eliminate la scorza di limone (se presente) e spegnete il fuoco. Se invece desiderate una confettura vellutata, eliminate la scorza di limone (se presente), frullate il tutto, verificate la consistenza su un piattino e spegnete il fuoco.
  5. Invasare in vasetti precedentemente lavati e sterilizzati. Capovolgere a testa in giù per un paio di ore, poi girare e conservare in luogo fresco e asciutto.

      E ovviamente, con un pizzico di invidia (di quella buona) non vedo l’ora di sapere tutto del viaggio… io sono in mezzo fra un week-end in Val d’Aosta e uno in Langa, quindi non mi lamento, però non è proprio la stessa cosa, eh?! 😉

      ti rispondo via mail, perché credo possa essere più immediato!
      Quando uso la pectina di solito uso la Fruttapec 3:1, e la uso come da istruzioni: una busta per 1kg di frutta/ortaggio pulito.
      Spesso ormai faccio proprio a meno della pectina, e uso il vecchio metodo della nonna: tempo e pazienza 😉
