Passata la festa, gabbatu lu santu pt. 3 – Cappone ripieno

Questa ricetta segna la fine della mia serie “passata la festa, gabbatu lu santu“, nata per non dimenticare troppo in fretta le Feste natalizie, che sono ormai ahimé solo un lontano ricordo.

Forse, fra le ricette che vi ho proposto con protagonista il Signor Cappone (e le maiuscole sono d’obbligo), questa è quella maggiormente legata (a filo doppio, direi) alle feste… certo, anche i tortellini non scherzano, ma trovo che quelli possano trovare un utilizzo più vasto, mentre il cappone ripieno richiama immediatamente la festa, È festa: come altro definire, infatti, una carne di per sé già grassa e gustosa, quando viene farcita di ogni ben di Dio?! È festa, non c’è altra spiegazione o definizione che regga.

Per il mio cappone ripieno ho tratto ispirazione da questa ricetta piemontese, cambiandola però secondo il mio gusto personale qui e là.

La ricetta è quasi del tutto priva di quantità, perché sono andata assolutamente ad occhio (o a palato, che dir si voglia)
Ingredienti
  • un cappone disossato di circa 2 kg
  • 400 g di carne tritata di bovino
  • salsiccia
  • castagne lessate e sbriciolate
  • prugne secche denocciolate
  • pane raffermo
  • latte
  • Parmigiano Reggiano grattugiato
  • sale
  • pepe
  • 1 o 2 uova
  • olio extra-vergine d'oliva
  • carota
  • cipolla
  • rosmarino
  • aglio
  • alloro
  • vino bianco
Procedimento
  1. In una terrina, mescolate la carne tritata di vitello, la salsiccia (precedentemente tolta dal budello), le castagne lessate sbriciolate, qualche prugna secca tagliata grossolanamente, il pane precedentemente ammollato nel latte e strizzato, il Parmigiano grattugiato, quindi aggiustate di sale e pepe. Da ultimo aggiungete l'uovo/le uova, valutando a seconda della consistenza se ne siano necessarie due o ne basti uno soltanto.
  2. Prendete quindi il cappone, riempitelo con il composto ottenuto e cucitelo con ago e spago da cucina, in modo che risulti ben chiuso.
  3. In una padella abbastanza capiente, fate scaldare dell'olio extra-vergine d'oliva e mettete a saltare l'aglio, la cipolla e la carota tagliate grossolanamente e aggiungete rosmarino e alloro. A questo punto aggiungete il cappone e fatelo rosolare bene su tutti i lati, quindi sfumate con del vino bianco (1 o 2 bicchieri) e fate rosolare finché il vino non sarà un po' evaporato. Nel mentre, scaldate il forno a 200° C.
  4. Ora sistemate il cappone (con il fondo di cottura e le verdure) in una teglia da forno sufficientemente capiente e infornate in forno già caldo.
  5. Il cappone dovrà cuocere circa 2 ore, ma abbiate cura di seguirne la cottura e di irrorarlo spesso con il suo fondo di cottura.
  6. Sfornate e tagliate il cappone a fette con un coltello molto affilato (per evitare di spezzare troppo le fette). Servite con il suo sughetto e con un contorno di verdure al forno o saltate.
