Genova per noi – Botteghe storiche e antichi sapori

Ho avuto bisogno di qualche giorno di decompressione e di calma per potermi mettere a scrivere e, ancor prima, per riordinare le idee, gli appunti e le impressioni in merito ad un tour così ricco di stimoli e di emozioni come quello della scorsa settimana a Genova.

Parafrasando qualcuno più bravo di me a dare forma ai propri pensieri

che ben sicuri mai non siamo
che quel posto dove andiamo
non c’inghiotte e non torniamo più.

Io prima di mettermi a scrivere ho dovuto comprendere di essere tornata da Genova, una città che non è mai quello che sembra, che sorprende ad ogni angolo, che entra nelle ossa e difficilmente ne esce.

Il tour dello scorso fine settimana aveva come leit motiv la tradizione culinaria genovese, vista attraverso alcune delle sue eccellenze: la ristorazione, le botteghe storiche (buona parte delle quali di carattere enogastronomico), la focaccia e il pesto al mortaio.

Ma andiamo con ordine, se vorrete seguirmi in questo itinerario attraverso una Genova per me inedita. E, prima di affrontare un viaggio, è sempre meglio mettere qualcosa sotto i denti (si sa che viaggiare mette fame), quindi meglio partire dalla bottega giusta, Sa’ Pesta (poiché in passato luogo di vendita del sale, che da grosso veniva trasformato in fino al pestello), un’antica sciamaddaIl termine sciamadda, letteralmente fiammata, si riferisce a locali in cui troneggiava un grande forno a legna, dal quale venivano quotidianamente sfornate farinate, focacce e torte salate acquistate dai Genovesi. Un locale senza fronzoli, con piastrelle bianche e colori brillanti, tavoli e panche di legno, in cui si mantiene inalterato il fascino dell’antica bottega; anche la cucina ricalca la tradizione genovese, ma rimane fedele al carattere dell’antica sciamadda, dove regnano piatti semplici e rustici, come la farinata e le torte di verdure e di riso (con l’immancabile prescinseua), ma non mancano certo preparazioni più raffinate e lontane dal consumo “da asporto”, come la cima genovese o il minestrone genovese, arricchito dal pesto.

Il tour delle botteghe storiche continua con la Farmacia Alvigini, che mantiene tuttora l’arredo in stile liberty in radica di ciliegio, con credenze in vetro e legno scolpito ed intarsiato che fungono da base per il soppalco, utilizzato ancora oggi. Il liberty è un tratto distintivo, fin dal portale in legno intarsiato, anche della Camiceria Finollo, fondata nel 1899 e da allora assoluta protagonista dell’artigianato locale, con la produzione di abbigliamento maschile, in particolar modo di cravatte e camicie su misura, immancabili nel guardaroba di personaggi quali Guglielmo Marconi, del Duca di Windsor e dell’Avvocato Agnelli.

Inoltrandosi nei vicoli adiacenti Piazza De Ferrari, nel cuore della città medievale,  si cambia completamente ambientazione e con essa registro, con l’Antica Tripperia di vico Casana, dove dal 1890 si vende e si cuoce la trippa. Un negozio senza insegne, al quale i miei occhi moderni non sono più abituati, dove gli arredi e gli utensili sono quelli originali, di inizio Novecento: il bancone è in marmo decorato, le pareti piastrellate, così come il ronfò (storpiatura genovese del nome del duca di Rumford, inventore di questo tipo di stufa) e la cappa, sotto la quale troneggiano due pentoloni in rame stagnato della capienza di 700 litri ognuno, nei quali ancora oggi si cucina la trippa accomodata alla genovese, con funghi, pinoli, fagiolane (cioè i fagioli bianchi di Spagna), patate e poco pomodoro. Io l’ho assaggiata di mattina, ma mi avessero lasciata 10 minuti sola con quel pentolone, chissà quante cose ci saremmo potuti dire. Dalla sapienza della bottega, però, arriva un ulteriore consiglio, di assaggiare la trippa in insalata, ancor meglio se condita con il pesto genovese, per me un invito (a nozze, visto il mio amore assoluto per la trippa) a mangiare la trippa anche d’estate.
Troviamo ancora nella bottega i tavoli in legno e marmo ai quali sedevano i marinai per bere il brodo di trippa, rimedio casalingo per smaltire una sbornia; lo stesso brodo si utilizzava per la sbira, un crostone di pane condito con gli avanzi della trippa accomodata, brodo caldo e Parmigiano. Ironia vuole che oggi il brodo di trippa non possa più essere commercializzato, ma se avrete l’accortezza di portare con voi una bottiglia, qui ve la riempiranno gratuitamente di brodo di trippa, un retaggio dei tempi che furono.

Basta girare un paio di angoli, e la geografia urbana cambia nuovamente, e ci si ritrova in Piazza Soziglia, dove sorge la storica Confetteria Romanengo, fondata nel 1780 e da allora specializzata nella canditura e nella confetteria, due produzioni tipicamente genovesi; per quanto riguarda i canditi, questa tradizione affonda le sue origini nella secolare frequentazione che i Genovesi ebbero con gli Arabi, inventori di questa tecnica di conservazione della frutta, mentre la specializzazione nel campo della confetteria si deve al primato detenuto in passato dai Genovesi nella produzione dello zucchero (per avere informazioni più approfondite sull’argomento vi invito a leggere qui).

Ma questa bottega non si è limitata alla prosecuzione e al perfezionamento di questa raffinata tradizione, ha innovato, portando a Genova le migliori invenzioni dei maestri pasticceri francesi, come fondant e gocce di rosolio, facendole proprie, come propria è diventata la maestria nella produzione del cioccolato (con cacao macinato a pietra in loco), rappresentata appieno dalla storica Tavoletta Santè, di cioccolato pressato (non concato), rimasta fedele alla tecnica utilizzata nel 1800.
Potendo visitare la bottega nel periodo precedente la Pasqua, si possono anche vedere (ed assaggiare) i Quaresimali, ciambelline di pasta di mandorla (senza grassi aggiunti, come prescritto dai dettami religiosi) spolverate di zucchero e poi ricoperte da confettini di microscopiche dimensioni, che vengono qui ancora confettati a mano, uno per uno. La bottega, inoltre, conserva ancora strutture e arredi originali, dai pavimenti in marmo policromo al soffitto affrescato e decorato da stucchi, senza dimenticare scaffalature e banconi di legno intarsiato, il degno scrigno per tali e tante delizie.

In un costante passaggio dal dolce al salato e viceversa, il viaggio fra le antiche botteghe genovesi continua nell’antica Polleria Aresu, attiva dal 1910 e ormai alla terza generazione, una vera e propria storia di famiglia. La signora Anna pesa il coniglio ed estrae da un quadernino la fotocopia della sua ricetta del coniglio alla ligure da consegnare al fortunato cliente, e ci dice sorridendo di aver salvato così ben più di una sposina, nel corso degli anni; il marito Sergio nel mentre disossa un coniglio, e poi divide in pezzi quello da preparare alla ligure, dispensando consigli e raccontando di come le ex ghiacciaie siano ora diventate delle celle frigo. Ma di cambiamenti non ce ne sono stati molti altri, dal momento che quasi tutto il resto è originale, dal pavimento ai soffitti, dal bancone in marmo con fregi alle mensole fino alle piastrelle. E non pensate che sia facile lavorare lì dentro, ci ammonisce loro figlio, perché d’inverno fa freddo, e freddo assai, in quella bottega; ma ce lo racconta col sorriso sulle labbra, con l’orgoglio di chi ha un’immensa passione per il proprio mestiere, e glielo si legge negli occhi, lo si avverte nelle parole di elogio per i loro prodotti (tutta carne piemontese, e questo lo dico per campanilismo mio), nell’entusiasmo con cui ci mostra un cimelio, lo specchiauova, l’unico strumento per testare la freschezza delle uova, ponendole dinnanzi ad una luce per vedere l’ampiezza della camera ad aria (per inciso, a camera d’aria maggiore corrisponde una minore freschezza delle uova), nella convinzione con cui ci porge le fette appena tagliate del salame che vendono ogni giorno, di una bontà assoluta.
Quando c’è la passione, c’è tutto, e qui la passione si respira, quasi si riesce a toccare, così come si avverte il profondo affetto che lega questa famiglia, unita nella missione di tramandare una tradizione ed un mestiere.

Risalendo verso Via Garibaldi, la via dei Rolli, torniamo al dolce, alla Pasticceria Villa/Profumo, attiva dal 1827 e riconosciuta per la freschezza dei suoi prodotti, per l’artigianalità e per l’utilizzo di materie prime di alta qualità. Le loro specialità sono stagionali, come ci spiegano i proprietari, Marco e Maurizio Profumo, ma non possono di certo mancare i confetti (di ogni colore) e la frutta candita, ma ci rivelano anche esperimenti arditi di canditura di verdure, non solo di peperoni e finocchi, ma di carciofi, di cui ci rivelano un’inaspettata bontà. Da allora sogno di assaggiare  questi carciofi canditi, e chissà che prima o poi non riesca a provarli; intanto ho portato indietro con me i loro consigli sulla canditura casalinga dei marroni (che sicuramente metterò in pratica più avanti, avendo anche imparato dai miei errori) e la vista degli antichi strumenti da pasticcere che fanno bella mostra sulle loro pareti.

Si giunge infine alla Loggia Gattilusio, uno dei più importanti esempi architettonici della Genova Medievale, dove ha sede la Pasticceria Liquoreria Marescotti di Cavo, fondata nel 1780 e che prese tale nome nel 1906. La gestione Marescotti durò fino al 1979, e da allora il negozio rimase chiuso ed intoccato nei suoi arredi fino al 2008, quando venne rilevato da Alessandro Cavo, pasticcere di quinta generazione. Ed appare ora come allora,  con le sue vetrine in cristallo colme di bottiglie di una rarità disarmante, con i suoi ottoni, i suoi marmi, le sue casse “National Cash Register”. Qui si può bere il Marescotto, aperitivo originale  frutto del mix di due vermouth (rosso e bianco) e di chartreuse, un aperitivo che è più di un aperitivo, per la sua componente alcolica e per il suo spiccato sapore erbaceo; si può ovviamente gustare la pasticceria fresca, ma anche pranzare con una delle notissime torte di verdura liguri, o un piatto di pansoti di borragine al sugo di noci o di stoccafisso accomodato.

Ma se le botteghe storiche di Genova finiscono qui (non pensiate che siano davvero tutte qui, in realtà quelle al momento riconosciute dalla Camera di Commercio di Genova sono ben 21), lo stesso non si può dire per le eccellenze gastronomiche di questa città, una su tutte la focaccia.

E poter imparare la ricetta della focaccia, apprendere qualche malizia e vedere il procedimento seguito da un maestro dell’Associazione Panificatori come Rosario Bisanti, decenni di esperienza alle spalle, un uomo che ha girato il mondo, Italia compresa, proprio per insegnare la focaccia (anche in uno dei più noti panifici di Torino, ad esempio), per me è stato un privilegio, di quelli grandi. Giuro che quei segreti non me li porterò nella tomba, ma li condividerò non appena avrò il tempo di mettere in pratica i suoi insegnamenti.

Qui potete vedere il risultato delle sue capaci mani. Io vi posso solo assicurare che, nonostante una giornata trascorsa ad assaggiare ininterrottamente specialità di ogni sorta, dalla trippa ai Quaresimali e viceversa, non ho saputo resistere alla sua focaccia appena sfornata, men che meno a quella con cipolle ed erba cipollina.

A contendere alla focaccia il podio dei prodotti gastronomici genovesi più amati c’è indubbiamente Sua Maestà il Pesto, protagonista lo scorso week-end del V Campionato Mondiale di Pesto genovese al mortaio, che ha visto cento partecipanti da tutto il mondo sfidarsi nella preparazione tradizionale del pesto genovese, con mortaio di marmo e pestello di legno.

Entrando nella sala della Maggior Consiglio di Palazzo Ducale, sabato mattina, si avvertiva in maniera chiara che questo campionato è un evento che i Genovesi attendono con trepidazione, e che vivono pienamente. La sala era di gremita, sì di concorrenti, sì di giudici, sì di stampa, ma soprattutto di Genovesi, che osservavano con attenzione i concorrenti durante la gara, ne studiavano i movimenti, commentavano il colore del pesto dell’uno o la consistenza di quello di un altro e si confrontavano con le ricette di famiglia, ammettendo a mezza voce che ormai il pesto alla vecchia maniera non lo facevano più, ma che quello era uno sprone per riprovarci.

Non vi sto poi a descrivere l’odore di basilico che ha invaso la sala quando tutti e cento i concorrenti hanno cominciato a pestare, ma vi basti sapere che quasi faceva girare la testa.

Gli ingredienti previsti dalla ricetta ufficiale del pesto genovese sono solo sette: il basilico genovese DOP della riviera ligure, i pinoli italiani, l’aglio di Vessalico (Imperia), il Parmigiano Reggiano DOP, il fiore sardo DOP, il sale marino (grosso) delle saline di Trapani e l’olio extravergine di oliva DOP Riviera Ligure.

Il resto è maestria, è tecnica, è esperienza.

E, quando l’esperienza e la maestria contano, e tanto, non si poteva rimanere indifferenti a questa signora, Alfonsina Trucco, anni 87, che ha portato con sè (mi auguro aiutata da forti e giovani braccia) il proprio mortaio di marmo di taglia extra-large, così come fuori taglia era il suo pestello, consumato da anni di utilizzo, ma ancora più simile ad una pagaia che ad un pestello.
Vederla all’opera, con i gesti calmi e sicuri di chi il pesto lo fa da una vita, incurante che il suo metodo differisse da quello comune, era un puro piacere, una di quelle viste capaci di rimetterti in pace col mondo, come vedere la propria nonna preparare la merenda confortante della propria infanzia (per me pane burro e zucchero, ma non stavamo parlando di questo).

Non mi ha stupito, quindi, sapere che proprio lei era la vincitrice del campionato, per questa edizione; avrei scommesso su di lei, ed avrei scommesso bene.

E poi c’è Lei, Genova, Genova che ti sa stupire ogni volta che guardi verso il cielo, che si apre azzurro azzurro fra i vicoli stretti dei carruggi, Genova che ti coglie impreparato con la sua bellezza schietta e genuina, il cui mare ti sorprende all’improvviso, grazie a “quell’aria spessa carica di sale, gonfia di odori”, proprio quando ormai ne avevi scordato la presenza.

Genova e i suoi mercati, il bellissimo mercato Orientale, ricco di merci e di colori, dove puoi trovare polvere di ortica e di spinaci, erbette per le torte di verdure e pesci di cui invidio la varietà e la freschezza; ma anche il nuovissimo mercato del Carmine, in cui a fianco dei selezionatissimi banchi del mercato orientati a prodotti di qualità e a km 0 trova spazio l’Enoteca Regionale Ligure e la ristorazione tradizionale, che ti ammalia con la semplicità della sua panissa fritta e delle frittelle di pesce e di verdure e ti sa stupire con le trenette al cacao condite con pesto genovese.

Genova è la sua gente, che ho apprezzato come mai prima d’ora per la profonda tolleranza, per l’apertura mentale e per la squisita gentilezza, anche se spesso celata da atteggiamenti tanto schietti da sembrare quasi bruschi. Io che sono piemontese, e che ho sempre bazzicato la Liguria e Genova fin da bambina, non avevo mai colto così intensamente la grandezza e la bellezza di questa città e di chi la popola, avvertendo sì delle grandi differenze rispetto alla mia Torino, ma sapendo che in fondo in fondo..

Eppur parenti siamo un po’
di quella gente che c’è lì
che in fondo in fondo è come noi, selvatica,
ma che paura ci fa quel mare scuro
che si muove anche di notte e non sta fermo mai.

È doveroso un ringraziamento all’Ufficio Comunicazione del Comune di Genova, Direzione Comunicazione e Promozione della Città, che ha organizzato questo meraviglioso tour. Grazie di avermi fatto scoprire una Genova inedita e splendida.

Meraviglioso giro esperienza, bellissimi locali i salati sarebbero stati la mia rovina, quelli dolci un pò meno ma per il resto…adoro il pesto quello della nonnina deve essere stato una delle meraviglie del mondo. Qualche ricetta di quelle che hai fotografato non andrebbe male. Adoro la cucina ligure in genere ovviamente anche la genovese. Grazie del tour e buona giornata.
