Finalmente vedo asparagi, piselli, fave e fragole invadere i banchi del mercato, e vedo timidamente comparire le erbette di campo, le ortiche, la borragine e i luvertin, il luppolo selvatico (vivo in città, altrimenti li vedrei direttamente nei campi.. mi accontento del mercato, che è già gran cosa).
E così, all’urlo PRIMAVERAAAA ho messo tutto (o quasi) in un unico piatto, un orzotto con piselli freschi, fave e luvertin, una piantina che riserva delle fantastiche sorprese. E se non lo conoscete e ne volete sapere qualcosa in più, non basatevi su di me (che non è cosa), ma sulla bellissima scheda di Comandante Amigo, qui da Serena di Sere in cucina (che ha fatto delle frittelle di birra e verdisci, nome ligure del luvertin) o qui da Elisa di Sapori di Elisa (che ha fatto degli strepitosi gnocchi di patate e luvertin).
Orzotto con fave, piselli e luvertin

- Preparazione: 20 minuti
- Cottura: 40 minuti

Ingredienti
- 2 noci di burro
- 1 piccola cipolla tritata finemente
- 40 grammi di piselli freschi già sgranati
- 40 grammi di fave fresche già sgranate e sbucciate
- 40 grammi di luvertin
- 200 grammi di orzo perlato
- 1,5 litri di brodo vegetale preparato con il mio dado fatto in casa
- sale q.b.
- pepe nero macinato, q.b.
- Parmigiano Reggiano grattugiato
Istruzioni
- In una padella sufficientemente ampia (meglio ancora di rame) fate sciogliere una noce di burro, quindi fate rosolare la cipolla finché morbida e trasparente.
- Aggiungete quindi le fave, i piselli e i luvertin (tagliati a tocchetti o interi, come preferite) e lasciate cuocere per una decina di minuti, se necessario aggiungendo un po' di brodo vegetale.
- Aggiungete l'orzo, tostatelo per un paio di minuti, quindi cominciate via via ad aggiungere mestoli di brodo vegetale, mescolando frequentemente, e aspettando che il brodo sia assorbito prima di aggiungerne ancora, come fareste per un risotto.
- A fine cottura (circa 30 minuti, ma potrebbero volercene anche di più), aggiustate di sale se necessario, aggiungete una macinata di pepe nero e, fuori dal fuoco, mantecate con una noce di burro e del Parmigiano Reggiano grattugiato.

Come potete notare, nel corpo della ricetta, in fondo a destra, è comparso il tastino “Stampa ricetta”, uno strumento che spero vi sarà utile quando avrete bisogno di tenere la ricetta sotto mano!
Ma sai che io che vivo in campagna non sapevo che si chiamassero luvertin?
Forse è solo questione di zona 🙂

Sì, mi sa che è proprio una questione di zona.. qui si chiamano luvertin, ma in Liguria per esempio verdisci.. chissà come si chiamano da te! Gran bel piatto primaverile.. e lo trovo perfetto anche con un “semplice” risotto 😉

Anche io in genere mi rifornisco al mercato, perché come dicevo nel mio post sono piuttosto ignorante in fatto di raccolta di erbe spontanee. Ora i luvertin però potrei anche raccoglierli visto che quei due mi hanno istruita a dovere 😀
