Back in Turin – Melanzane ripiene di friggitelli, pomodorini e scamorza affumicata per il #GFFD

In realtà sono tornata a Torino da quasi una settimana, ma sono stata catapultata talmente in fretta tanto profondamente nella normale vita quotidiana, che trovo solo oggi il tempo di sedermi a tavolino e di scrivere una nuova ricetta.

Poi, con la mia solita calma e i miei soliti tempi (biblici) scriverò anche qualcosa sul mio soggiorno in Calabria, che non è stata unavera e propria vacanza, ma che mi ha permesso lo stesso di vedere posti nuovi e di godere di un po’ di mare (stupendo) da sola ed anche insieme alla mia pelosetta.

Insomma, a presto (più o meno) con un piccolo resoconto, mentre si programma il prossimo viaggio con tantissima voglia di partire.

Ma, nel frattempo, dovremo pur mangiare! E così eccovi la ricetta della melanzane ripiene di friggitelli, pomodorini e scamorza affumicata, ricetta tratta da Sale & Pepe, provata ed amata al primo assaggio.

Melanzane ripiene di friggitelli, pomodorini e scamorza affumicata

  • Cottura: 60 minuti
  • Pronta In: 1 ora 30 minuti

Ingredienti

Istruzioni

  1. Lavate le melanzane, tagliatele a metà nel senso della lunghezza (senza togliere il picciolo) e con uno scavino per meloni o un cucchiaino estraetene la polpa. Sistemate le melanzane e la polpa in acqua acidulata (con il succo di limone).
  2. Lavate i pomodorini e i frigitelli, quindi tagliateli a tocchetti. Sgocciolate la polpa di melanzana, asciugatela e riducetela a tocchetti.
  3. In una padella fate scaldare dell'olio, quindi fatevi dorare lo spicchio d'aglio (se volete schiacciato, altrimenti intero), unite la dadolata di verdure e fatela rosolare a fiamma viva per 5 minuti, quindi salate, pepate e aggiungete i semi di finocchio e proseguite la cottura per altri 10 minuti. Unite il finocchietto tritato e spegnete il fuoco
  4. Togliete le melanzane dall'acqua acidulata, asciugatele e disponetele su una teglia coperta di carta forno. Farcitele con il mix di verdure, irrorate con olio extra-vergine. Coprite con un foglio di alluminio ed infornate a 180°C per 30 minuti.
  5. Togliete quindi l'alluminio, cospargete le melanzane con la scamorza grattugiata e continuate la cottura per altri 5 minuti a 250°C.
  6. Servite calde o tiepide

  2. Il mio terrore con le melanzane ripiene é che vengano sempre troppo dure. Ma evidentemente è una paura sciocca, bisogna che mi butti anche perché le melanzane sono fra le verdure che più adoro al mondo. Il ripieno friggitelli e scamorza é la vera ciliegina sulla torta!

    1. Buttati, che è morbido!
      Vabbè, cavolate a parte, devo dire che le melanzane ripiene non sono mai venute troppo dure, a patto di avere un bel ripieno umido che le ammorbidisca. Quindi ovviamente benissimo il ripieno di carne, ma anche di verdure succose, come in questo caso.

      io sono di nuovo a Torino da metà luglio, subito stra-catapultata a lavoro, attendo con ansia l’11 di agosto per partire per il viaggio vero, la vacanza (/massacro, ma questa è un’altra storia).
