Buon 2015! Strascinati di grano arso con salsiccia, cavolo nero e nocciole

Buon anno a tutti!

Non mi facevo viva sul blog dal vecchio 2014, e non potevo mancare oltre.. almeno per farvi i miei auguri per questo anno appena iniziato, a cui possiamo ancora dare il beneficio del dubbio: troppo presto per giudicare, abbastanza presto per guardarlo con speranza.

Non so come sia stato per voi il passaggio d’anno, se lo abbiate trascorso fra feste, balli, ricchi premi e cotillon o se abbiate optato per un passaggio più soft e più intimo, come lo è stato per me, in Val d’Aosta, fra terme, relax e tante scorrazzate sulla neve, non tanto per me quanto per l’orsetta delle nevi che vedete più in basso.

A Capodanno, però, non possono mancare cibo e vino, e io quest’anno (ma ormai lo faccio sempre, a dire il vero) ho optato per il “poco ma buono“: pochi piatti, pochi vini, ma di qualità. E così ho preparato un primo piatto semplice, di stagione e che ho trovato davvero eccezionale, tanto che sicuramente lo proporrò presto sulla mia tavola, degli strascinati (qui potete vedere come prepararli) di farina di grano arso (regalatami da Giorgia) con salsiccia, cavolo nero e nocciole, che si sposano benissimo al sapore tostato del grano arso. Abbiamo abbinato al piatto un favoloso vino valdostano, un Blanc de Morgex metodo classico brut.

Strascinati di grano arso con salsiccia, cavolo nero e nocciole

Ingredienti

Istruzioni

  1. In una terrina mescolate le due farine e un pizzico di sale, quindi aggiungete via via acqua tiepida ed impastate fino ad ottenere un impasto liscio ed omogeneo. Avvolgete in pellicola per alimenti e lasciate riposare per almeno 30 minuti, quindi formate gli strascinati e lasciateli riposare su vassoi infarinati.
  2. Mondate e tritate finemente carota, sedano e cipolla. In una padella scaldate un filo d'olio e fate soffriggere. Mondate e tagliate a pezzi (anche strappandolo con le mani) il cavolo nero, quindi aggiungetelo al soffritto e fate cuocere per 10/15 minuti, aggiungendo se necessario dell'acqua.
  3. Togliete la salsiccia dal budello, quindi sbriciolatela con le mani ed aggiungetela al cavolo nero in cottura. Aggiustate di sale e di pepe, quindi cuocete per circa 15/20 minuti, o finché la salsiccia non sia ben rosolata e cotta. Negli ultimi 5 minuti di cottura, aggiungete mezza manciata di nocciole tritate grossolanamente.
  4. Portate a bollore una pentola di acqua, quindi buttate a poco a poco gli strascinati, scolandoli via via che vengono a galla utilizzando una schiumarola, e unendoli direttamente al sugo ancora in cottura, mescolando. Impiattate e finite con ulteriori nocciole tritate.
