Un mese di distanza dall’ultimo MTC, e si riparte più carichi che mai..
Abbiamo lasciato novembre con i muffins (i miei, questi e questi) e ritorniamo a bomba con i canederli ampezzani di Monica, che devo dire sulle prime mi hanno dato del filo da torcere, per un semplicissimo motivo: non ho (almeno a mia memoria) mai assaggiato, figurarsi preparato, dei canederli.
Così il mio dilemma era quello di azzeccare delle componenti del ripieno che fossero in pieno equilibrio e s armonizzassero, non solo fra loro, ma anche con il condimento. E, dopo pensieri e ripensamenti, ho pensato di portare i canederli a fare una gita in Langa, utilizzando prodotti tipici di quel territorio. Così, dentro i miei canederli ci sono il salame cotto, un prodotto tipicissimo del Piemonte, e l’immancabile toma, e ho deciso di servirli su un letto di crema di lenticchie (anche quelle di Langa, rossastre e piccoline).
E sapete qual è l’ironia della sorte? Che al primo assaggio di questi canederli, che per inciso sono favolosi (tanto che li ho rifatti due volte in due giorni), mi hanno ricordato.. il babà rustico campano. Ma sapete che c’è? Io il babà rustico lo amo e lo adoro, quindi ne sono pure contenta!
Canederli con salame cotto e toma su crema di lenticchie

- Resa: 2 Persone servite
- Preparazione: 30 minuti
- Cottura: 40 minuti
- Pronta In: 1 ora 10 minuti
Ingredienti
- 150 grammi di pane raffermo a mollica compatta, con crosta sottile
- 100 millilitri di latte
- 1 uovo
- 40 grammi di toma a media stagionatura
- 80 grammi di salame cotto
- sale
- pepe nero
- 1 cucchiaio di farina 00
- olio extra-vergine di oliva
- 2 carota
- 1 grossa cipolla
- 2 coste di sedano
- 250 grammi di lenticchie
- 1 foglia di alloro
Istruzioni
- Per prima cosa preparate le lenticchie. In un tegame, fate scaldare dell'olio extra-vergine, quindi rosolate il trito di 1 carota, 1/2 cipolla e 1 costa di sedano. Unite le lenticchie, la foglia di alloro e aggiungete acqua a coprire. Aggiustate di sale e continuate la cottura finché le lenticchie saranno cotte, aggiungendo via via altra acqua in base a quanta sarà necessaria. Quindi frullate, riducendo a crema e tenete da parte.
- Preparate il brodo vegetale in cui cuocerete i vostri canederli, mettendo a bollire una carota, mezza cipolla e una costa di sedano, aggiustando di sale e facendo cuocere per 40 minuti/un'ora.
- Preparate quindi i canederli. Tagliate il pane raffermo a quadretti di al massimo 1x1 cm e metteteli in una terrina. A parte, sbattete il latte con l'uovo, quindi versate i liquidi sul pane e mescolate. Lasciate quindi riposare 20 minuti, mescolando di tanto in tanto. Il liquido non vi parrà sufficiente e sarete tentati di aggiungerne; non fatelo, è perfetto così, perché il pane dovrà risultare umido, ma non inzuppato.
- Mentre il pane riposa, tagliate in cubetti il più piccoli possibili la toma e il salame cotto. Trascorsi i 20 minuti, salate e pepate il pane ammollato, unite la toma e il salame e mescolate.
- Unite quindi il cucchiaio di farina e mescolate a fondo con le mani, compattando ed uniformando la distribuzione degli ingredienti nel composto.
- Inumiditevi le mani e procedete a formare i canederli, che dovranno essere di 3-4 cm di diametro, e disponeteli su un piatto.
- Scaldate su fiamma bassissima la crema di lenticchie e tenetela calda.
- Scaldate il brodo e portatelo a lieve bollore, quindi mettete i canederli in un numero consono alla vostra pentola (piuttosto fate più cotture, ma evitate di ammassarli) e fate bollire per 8/10 minuti (ma anche per 12, se li fate un po' più grossi).
- Quando sono quasi pronti, preparate i piatti stendendo uno specchio di crema di lenticchie, quindi scolate i canederli e adagiateli sopra.
- Io, visto il successo, e visto che avevo ancora ingredienti in casa, li ho rifatti il giorno successivo, appoggiati su un vassoio e messi in freezer. Una volta congelati, li ho staccati e riposti in sacchetti per alimenti, così saranno già pronti per la prossima volta che mi verrà voglia di canederli. E non sarà fra molto, temo.

Super canederli! Buonissimo il babà rustico… Anch’io ero preoccupata per l’impasto, ma alla fine è andato tutto liscio e sono venuti benissimo. Adesso sto programmando altre cene a base di canederli 🙂

Conoscendo i prodotti che hai usato posso immaginarmi quanto siano buoni e saporiti. Ma se ce ne fosse bisogno, quella toma che fila all’apertura del canederlo è un invito più che esplicito all’assaggio!

Abbinamento morbido e con mille sfaccettature, rese più evidenti da quella toma filante.
La base consistente e non troppo saporita offre l’appiglio giusto per quel salame cotto e il tutto si armonizza.
Veramente una bella realizzazione, con ingredienti semplici eppure ben esaltati, e si evince anche dall’interno: la cottura più prolungata del normale non li ha rovinati e quindi evidentemente il pane aveva bisogno esattamente di quella tempistica.

cioè, fammi capire: prima li illudi di portarli nelle Langhe, i tuoi canederli- e questi già pregustano la spa con i bagni di vino e le creme nutrienti al formaggio- e poi alla fine si devono adattare alla vita rustica, seppur della Campania Felix? ma chi te l’ha data, la patente?

Ah, ma per me Piemonte (e Langa in testa) è ruralità, ed è proprio Campania Felix, mica tutte quelle robe fashion lì, fra trucchi e belletti, fra SPA e vinoterapia (o meglio, io la vinoterapia la farei pure, ma in un modo non proprio approvato dall’associazione medici chirurgi).
