L’oro che preferisco, quello verde – Trofie con pesto di pistacchi

Non sono una tipa da gioielli.

O meglio, mi piacciono, ma ho un debole per quelli etnici, specialmente per quelli d’argento. Tipo il mio anello indiano, quello che ho il brutto di vizio di togliere quando cucino/lavo/impasto e che puntualmente semino da qualche parte, rischiando ogni volta di perderlo. Come quando lo misi nella tasca posteriore dei jeans, ebbi la geniale idee di infilarci anche le chiavi della macchina e, quando le tolsi di tasca, vidi l’anello iniziare a rotolare finendo dritto dritto nelle grate del palazzo di fronte. Se penso a quella scena (che io, non so perché, nella mia testa rivedo sempre al rallentatore), ancora oggi credo che avessi voluto farlo apposta non ci sarei riuscita. Per la cronaca, l’anello è riuscito a tornare all’ovile mesi dopo, quando il Colui si è introdotto nelle cantine di fronte a noi e a recuperarlo, per me è ancora un mistero come. Ma d’altronde, è archeologo.. avrà scavato.

Mi piace l’argento anche quando è vecchio, come quello della lunga catena che da un po’ porto sempre al collo, perché attaccati ci sono due ciondoli a forma di schiumarola e di paletta forata, unico ricordo di mia nonna, a cui evidentemente devo somigliare almeno un po’.

Certo, ho qualche gioiello d’oro, rigorosamente bianco, rigorosamente regalato, ma li indosso pochissimo, forse perché sono ancora in una fase in cui l’oro è quello che si indossa solo per le occasioni, laureamatrimoniobattesimi, mica roba di tutti i giorni (che poi io tutti i giorni entro ed esco dalle cucina, e non metto proprio nessun gioiello, che poi mi scoccio a mettere e togliere tutti i vari ammennicoli), e così giacciono in un cassetto, semi-dimenticati in attesa della prossima occasione.

Già, non sono una tipo da ori, tranne quello che in assoluto preferisco, quello verde dei pistacchi.. quello lo metterei dappertutto, come ho ampiamente dimostrato (random qui, qui e qui). Questa volta ci ho fatto un pesto (passatemi il nome, anche se non ho pestato un bel niente) velocissimo da preparare e dannatamente buono. Provare per credere.

Ingredienti

Istruzioni

  1. Cominciate preparando il pesto. Se usate la farina di pistacchi, il procedimento è molto semplice Se partite dai pistacchi sgusciati, vi consiglio di eliminare solo in parte le pellicine esterne, che renderebbero troppo scuro e amarognolo il pesto. Per farlo, tuffate i pistacchi in acqua bollente per 10-15 secondi, quindi spellateli e asciugateli.
  2. In un mixer, mettete i pistacchi (o la loro farina), le mandorle (che danno un tocco di dolcezza, ma potete anche non metterle), il Parmigiano grattugiato e iniziate a frullare, aggiungendo a filo l'olio extra-vergine, fino a raggiungere una consistenza cremosa; assaggiate e aggiustate di sale, se necessario. Tenete da parte
  3. Cuocete la pasta in abbondante acqua salata, prelevate qualche cucchiaio di acqua di cottura e unitela al pesto, mescolando.
  4. Scolate la pasta al dente e conditela con il pesto.
