2 mesi che non scrivo nulla su questo blog, e in cui la mia cucina si è quasi fermata.
Si chiama cucina di sopravvivenza: prendi un periodo di lavoro intensissimo (nel frattempo sono diventata lavoratrice autonoma, e ora al grido di “fatturare fatturare fatturare” di tempo a lavorare ne passo parecchio, e ben venga), mescola con un caldo terrificante che ha sciolto metà abitanti d’Italia, e aggiungi un pizzico di mancanza di voglia (e tempo) per fotografare-scrivere-pubblicare.
Però per una torta da colazione si trova sempre il tempo, specialmente ora che è settembre e che ritorna il fresco (maddove??), la voglia di programmare (ne ho parlato qui) e di cucinare qualcosa di più di un uovo sodo.
Insomma, la ciambella alla ricotta di Simona per ri-inaugurare il forno dopo la pausa estiva ci stava proprio.
CIAMBELLA ALLA RICOTTA
Ingredienti (per uno stampo da 22cm)
- 200 g di ricotta fresca a temperatura ambiente
- una bacca di vaniglia (o altro aroma, come scorza di agrumi grattugiata)
- 2 uova grandi a temperatura ambiente
- 160 g di zucchero
- 50 g di burro fuso freddo (oppure 45 g di olio di semi di girasole)
- 200 g di farina 00
- 1 bustina di lievito per dolci (16 g)
- 2 cucchiai di latte a temperatura ambiente
Procedimento:
- Circa mezz’ora prima di preparare la torta, tirate fuori dal frigo la ricotta e lavoratela accuratamente con un cucchiaio fino ad ottenere una crema liscia; lasciatela a temperatura ambiente.
- Aprite a metà la bacca di vaniglia e grattatene la polpa con un coltello, inserendola nella ciotola della planetaria, o in quella dove monterete le uova.
- Aggiungete quindi le uova e lo zucchero e montate il composto per 10 minuti fino ad ottenere un impasto chiarissimo e spumoso.
- Quando il composto di uova è diventato chiaro, aggiungete il burro fuso freddo a filo, continuando a montare per un altro minuto.
- Aggiungete un cucchiaio di farina, quindi mescolate nuovamente con le fruste, ma a velocità media, per incorporare bene la farina.
- Aggiungete quindi a cucchiaiate la ricotta a temperatura ambiente mescolando a velocità media. Amalgamate per circa 3 minuti: il composto deve presentarsi cremoso ed omogeneo.
- A questo punto aggiungete la farina, precedentemente mescolata con il lievito, in un solo colpo, e continuate ad amalgamare a velocità bassa.
- Pre-riscaldate il forno a 180°C.
- Aggiungete i cucchiai di latte e proseguite a velocità bassa per circa 5 – 7 minuti.
- Imburrate uno stampo (a ciambella o no) da 20-22 cm ed infarinatelo.
- Trasferite l’impasto nello stampo e livellate bene la superficie.
- Infornate la ciambella alla ricotta in forno ben caldo per circa 30-35 minuti. Fate comunque la prova stecchino prima di sfornare.
- Sfornate la torta e lasciate raffreddare 10 minuti nello stampo. Poi sformate la torta su una gratella per dolci e lasciatela raffreddare completamente, prima di tagliarla.
